Sometimes I Make A Lot Of Soup

We move back into the dorms soon. Soon as in about 19 days. There is a lot of food in our kitchen that it may be difficult to prepare in the kitchenless dorms. Challenge accepted. So what do I do first? Go buy big cans of tomatoes to make soup... but hey, I used some cheese that was needing eating so I win a little bit. I found this recipe for Tomato Basil Cheddar soup and knew my Chipotle Cheddar Cheese would work magnificently in it. And it did.

I really am going to start plowing through everything in our cupboards though. I made some bangin rolls yesterday!

If anyone has some tasty recipes with things like quinoa, lentils, beans, onion, zucchini, chickpeas, etc, send them my way. Gojee is proving to be an awesome resource for this.
Now I have so much soup. I put it all into little portion sized mason jars to keep and feed myself from now until forever. We went grocery shopping yesterday and I found the biggest onion. It was actually the size of my head. That baby went right in my soup.

Thrifting and Togas

When Leah and I get our paychecks apparently all we want to do is go shopping. This isn't entirely bad- we settled on thrifting and found some awesome things! I got a nice big mirror for my dorm room and a cute wooden shelf. I'm finally able to buy furniture, something I haven't really been able to do as it's awkward to store, and I can't bring things from Oregon to Kansas for school too easily. So I'm really excited about this! Other fun finds: a cute old fashioned can opener, a nice yellow teacup, a double picture frame, a heart shaped cookie cutter/pancake mold, a small frosted glass container, and MINI DONUT PANS! Those will be fun.

Last night was also a toga party. Benefit of having a sewing roommate: some awesome togas. Leah whipped us up some real nice togas out of a big sheet she found (also thrifted. Surprise!) and we used the leftover leaves from our flower crowns in our hair. I'd say they turned out quite well. I'll be holding on to mine for future use, you never know when you might need a quick toga. 0DSC_5091

A Wednesday Off.


Today I had the day off, so Landon and I went out to the pit before he had to work in the evening. We stopped at Subway on the way out and grabbed some lunch. (I think Landon eats more subway than anyone else I know) It didn't feel nearly as warm as the other days I've been out at the pit, which was weird because apparently it was still over 100 degrees. It's amazing how much of a difference it makes if it's sunny or not. I also kayaked for the first time! Thanks to Landon for taking all the kayak pictures. I discovered I'm quite the fan of kayaking.

When I got back home Leah had just finished making a new dress, so we went outside to take some pictures of it.

In the evening Leah and I caught a ride with our friend Jenae and we headed out to our boss Patty's house in the country for a birthday party and shrimp boil. I had never in my life heard of this kind of an event before today. We got there and Patty showed us the pots they had going; boiling corn, potatoes, sausage, garlic, onions and spices as we munched on some appetizers. They threw the shrimp in right at the end, then poured ice over the top. The next part was the really foreign part for me. The pots were dumped on a table surrounded by hungry people, with bread and butter all around and everyone just dug in. It was very tasty, but I'm pretty sure everyone's mouth was burning towards the end from the spice. We finished it off with some cake and homemade ice cream, and I was far too full- but it was a happy full.

Apparently there is a cold front hitting, it even rained tonight for a little while, which made Leah and I's night run even more refreshing. There was even lightening to watch when we turned around to head back home! As I sit here I can still feel all the food in my stomach though, my goodness.
Good news though, tomorrow is payday! I'm getting a little annoyed with the only once-a-month Bethel style of payment, but oh well. The realization that school is starting in less than a month is finally hitting. I should start looking for text books! (I'll start tomorrow.)
