And the week comes to a close

Just a fair warning, this post is basically for myself and you might find it a little boring, sorry!

As operation vegan week comes to a close I'm realizing how surprisingly easy it was! Given, I did make a few exceptions for tortillas and cinnamon rolls during math club (it was a special occasion). The cafeteria has actually surprised me - they had assemble your own options that could potentially be vegan more often than I expected them to this week. I think I might continue with the semi-vegan diet for a little while at least. Leah and I were both felt especially good on our run tonight- I feel like it will take longer to tell for sure if it really is affecting me though. The only this is that it's harder to make sure that I'm getting enough protein and other things like calcium, but as long as I'm intentional it's not impossible! I've also been trying to wean myself off of coffee (or not be quite as dependent) as my mother has informed me it's probably depleting my calcium. I've been drinking a lot of breakfast tea (only like a quarter of the caffeine of a cup of coffee) and ordering half-caf drinks for the first time in my life. It's quite a shift going from ordering an extra shot like I did all the time last year to ordering half-caf.

Vegan Week

The lovely Leah and I have decided to embark upon a week long vegan challenge! Starting today, we've decided to try out being vegan (or as close as is possible in our cafeteria). We're making an exception for bread and tortilla type things in the caf though - otherwise we'd be far too limited as far as options go. So I'll just continue eating vegetarian, but also no cheese or eggs.
Today went well, the only sad thing is you have to pay extra to get soy milk in your latte :'(
I'm excited to see how this week goes- I'll try and keep updated - and maybe with some pictures next time.
Other than this change my life continues to be pretty standard, I've been busy with classes and work and trying to still be able to socialize at the same time. Fall break is this weekend though, so only 4 more days until I get to relax again!

A Winfield Birthday

So far this school year has been busier than I expected, and this weekend was a welcome retreat. The Walnut Valley Festival in Winfield, Kansas was this past weekend. I had never heard of this event before coming to Kansas, but now in my third year here I finally made it there. Winfield is a crazy time of bluegrass music and wonderful people. Landon has gone every year of his life, and this year it also happened to be over my 20th birthday so a ticket to the festival was my birthday present- and it was amazing!
There are 4 official stages set up, then multiple small others set up around the campgrounds and we spent the days traveling between those and just hanging out with the other wonderful people there. There were a bunch of food vendors set up along with crafts which were fun to browse through. I got myself some pretty tasty food including a veggie reuben, homemade ice cream, breakfast tacos, hot chocolate and some pretty bangin roasted pecans that I couldn't seem to get myself away from.




We got there on Thursday night and it was pretty drizzly and cold, but over the weekend it slowly warmed up even though the sun never really showed it's face. It was overall a fantastic time and I hope so badly to be able to make it back again next year! Now, after taking a nap a bit longer than I anticipated, I should start working on all that homework that piled up...
