Runs, Walks, and Spring Rolls

Yesterday morning Leah and I popped out of bed bright and early to go for a run at 6 am. I never have close to as much energy in the morning, but we churned out about 3 miles - it was nice. These past two days have been a lot cooler, so it wasn't bad at all. Even a little on the cold side!
I worked in the morning and we just started using mason jars for "for here" cold drinks. They are the cutest thing in the world.
 Leah and I's work schedules overlapped for an hour today, she made the caramel mocha on the left, I made the coconut blender on the right :)

After work I came back and made myself a delicious lunch of bananas with greek yogurt and spinach-strawberry-feta salad, only to have the rest of the afternoon free.


Landon came over again in the afternoon and we decided to take a walk since the weather was PERFECT. We walked to Prairie Harvest, the token natural foods store in Newton. It was two miles each way, but didn't feel that terribly long. I got Kombucha, a fermented tea drink that my parents introduced me to, but I hadn't had since last summer. It makes a really good summer drink, but is a little on the expensive side.


We got back perfectly in time to start making dinner. We were having a spring roll night. We made three different kinds:
Swiss Chard and Spicy Peanut Sauce Spring Rolls (General consensus named these the favorite).




Joel came over and helped.


We also made Thyme Lemonade.







Sara has two friends visiting, and our friend Emma came over too. It was a good time!
